Dark Roast. The History of Doi Chang
Doi Chang is a remote mountain village located over 1,500 meters above sea level in the highlands of Chiang Rai, northern Thailand. Foggy mornings, rich volcanic soil (yes, you read that correctly), and cool mountain air seem tailor-made for growing incredible coffee. This is Doi Chang, and it has one of the most fascinating origin stories in the entire coffee world.
Until recently, the hill tribes of this region, including the Akha and Lisu peoples, had few options for a sustainable livelihood. Everything began to change in the late 1980s, when the Royal Thai Project replaced opium plantations with coffee plantations. It sounds simple, but it truly transformed lives. Entire communities rebuilt their futures around these tiny coffee berries, and the results were incredible.
In the world of specialty coffee, word spread quickly, as it usually does when something special is brewing (pun intended). Farmers, tasters, and coffee lovers from around the world began flocking to the area, and Doi Chaang quietly became one of the most talked-about coffee-growing regions in Asia. Today, the farming families who have cultivated these lands for generations continue to thrive. Every cup you drink carries this story, and we believe that's precisely what makes it taste even better.
So... What is a peaberry?
It's a great question, and the answer is far more interesting than you might expect. Inside a typical coffee cherry, two seeds grow side by side, forming flat edges where they meet. But sometimes, in about 5% of berries, something a little different happens. Instead of two, only one seed develops, and thanks to this extra space, it grows into a small, round, and surprisingly dense bean. This is a peaberry, and it's considered truly lucky.
Because all the nutrients from the coffee cherry are captured in one bean, rather than spread between two, peaberries have a more concentrated, sweeter, and more complex flavor, making every cup of coffee more rewarding. Their round shape also ensures more even mixing in the roaster, which coffee lovers say really makes a difference. Peaberries are hand-selected, making them rarer and especially valuable. Once you taste a peaberry, you'll understand their charm.
Freshly roasted, just for you.
